When I first committed to veganism, seitan, tempeh and tofu were all new ingredients to me, and I’ll happily admit that my first experiences were disastrous! I soon realised that the key is to infuse them with flavour. If you think about it, it’s the same as an omni marinading “meat”.
So, please don’t write these fabulous proteins off as bland, instead, get in your kitchen and experiment with some of the delicious recipes featured in this collection.
