Vegan Purple Magic Baked Steel Cut Oats

Made with simple ingredients, these baked steel cut oats are my newest obsession.

After one hour in the oven, the oats turn an amazing shade of purple from the cherries and blueberries, and each serving is wonderfully sweet without added sugar, and just brimming with antioxidant power.

Right from the oven you’ll be able to scoop these oats with a spoon. After the pan cools, they can be cut into squares. One batch is big enough for a few extra servings, and sure to come in handy on the next few busy mornings.

PURPLE MAGIC BAKED STEEL CUT OATS
Makes six servings

  • 1 cup steel cut oats
  • 1 quart unsweetened vanilla almond milk
  • 1 cup frozen cherries
  • 1 cup frozen blueberries
  • 2 teaspoons cinnamon
  • To serve: extra fresh fruit, if desired


Instructions


Preheat oven to 350 degrees.
Mix all ingredients together in a 9″ x 13″ pan. Bake for one hour. To serve, top with extra fresh fruit, if desired.
Cooled leftovers can be refrigerated in a covered container.
